Pearl Meat Stir Fried
Marinate pearl meat in fresh ginger juice (pureed or grated fresh ginger and squeeze out juice through tea towel).
Cook 20 seconds until pearl meat coloured, add sliced chillies. Toss.
Add the rest of the mirin. Sprinkle with white pepper, rice vinegar and soy sauce.
Serve sprinkled with ginger julienne and fresh coriander.
Pearl meat needs really little cooking.
