Pearl Meat Stir Fried


  • 4 appetisers or two entrees
  • 250g fresh pearl meat
  • 1/2 bunch spring onion
  • 2 red chilli, sliced finely
  • 10cm piece ginger (7-8cm for juice and a tablespoon of julienne slices)
  • 60ml mirin
  • 30ml rice vinegar
  • 30ml healthy boy soy sauce
  • Pinch sugar, salt and white pepper
  • 1 chilli
  • Coriander leaves
  • Olive oil


Marinate pearl meat in fresh ginger juice (pureed or grated fresh ginger and squeeze out juice through tea towel).

Heat a wok very hot, and add a little olive oil. Add, spring onion whites and pearl meat, a splash of mirin, salt and sugar.

Cook 20 seconds until pearl meat coloured, add sliced chillies. Toss.

Add the rest of the mirin. Sprinkle with white pepper, rice vinegar and soy sauce.

Serve sprinkled with ginger julienne and fresh coriander.

Pearl meat needs really little cooking.
